McDonalds Hotcake Protein Pancakes

Sports moms!!! It’s never easy finding healthy meals that kids love and are quick and easy to grab on the go. Like most kids my son loves McDonalds hotcakes and I created a copycat recipe with whey protein that is sure to impress hotcake lovers. So light and fluffy. Try it out and let me know what you think.

I make a big batch of these every week and freeze them. My son throws one in the microwave each morning for a quick breakfast before hitting the gym.

INGREDIENTS

3 cups all purpose flour

2 cups pure whey protein isolate (I use Allmax ISO Natural pure whey protein isolate)

1/2 cup granulated sugar

4 tbsp baking powder

1 tsp salt

4 cups 1% milk

1/2 cup vegetable oil

4 large eggs

1tsp pure vanilla extra

DIRECTIONS

In a large bowl, add all dry ingredients and stir well.

In a separate bowl combine all wet ingredients and whisk until combined.

Add wet ingredients to dry ingredients and whisk until combined. Allow to sit for 5 minutes.

Heat pan and turn to low to medium heat. The key is to cook on lower heat to prevent burning. Scoop 1/2 cup of batter onto pan and flip once it starts to bubble and edges look a little set. Makes 24 hotcakes.

24 hotcakes (with 1 cup of semi sweet chocolate chips added to the batter) . Each has 187 calories 16 grams of protein , 4 grams of fat and 25 grams of carbs.
